B: Ah, Gyoza! It's also called potstickers, but maybe only in America. Also, what's soba stew?
A: Well... as a dish, it's kind of hard to explain. I make my soba stew by adding chicken bouillon powder, bonito flakes, and soy sauce to hot water. After that, I put soba in the there and that's it. It takes only five minutes in my case. The same is true for everything; some people make it easy like me, and of course, some people stick to cooking traditionally. The way the broth is made varies depending on the region and family though.

A: Yeah, I went to Italy, France, China, and then back to Japan. lol

I think if the diameter is less than 1.3mm, it's called "somen". If it's between 1.3 and 1.7mm, it's called "hiyamugi", and if it is more than 1.7mm, it's called "udon".
B: What's the difference between ramen  and udon noodles?
A: I think the water used is different. Udon is made with water, while ramen is made by mixing an alkaline solution called kansui with flour.
B: What about soba?
A: Soba is made from buckwheat flour, so I think it's a different thing.
I'm not sure if that's correct though, since I don't know much about it.
B: So there's a lot of different kinds of noodle in Japan.
A: Yeah. You get noodles that are kneaded into something, udon dishes with only a single long noodle in it, and so on.

A: Rice cooked with chicken, burdock, carrots, shiitake, and other stuff. In water seasoned with soy sauce. The ingredients used vary from household and region.

If I could, I'd like to see the northern lights in Norway or Alaska or something. The problem is I'm very sensitive to snow and very low temperatures. It would be a sight to behold though. So, what's "ochazuke"?
A: "Ochazuke" is a traditional rice soup made with rice and green tea.
But in my case, or in most people's cases, ochazuke is made with ochazuke powder, which you dissolve in hot water before eating.

It is a soup stock made from dried bonito flakes and kelp, flavored with soy sauce and other seasonings, and then simmered for a long time with various ingredients called tane. Ingredients include fried satsuma-age, hanpen, grilled chikuwa, tsumire, konnyaku, daikon radish, sweet potato, beef tendon, boiled egg, thick fried bean curd, and many others. I love this dish!
