Hallo, ich heiße Mario, und ich komme aus Kanada und ich bin neu hier. Ich snowboarden gerne, Musik und Klavier spielen gerne, und essen gerne. Es ist nicht so einfach für mich zu schreiben was ich möchte in Deutsch, deshalb bin ich hier.

All correct. But normally you would omit the first "und" and just write:
"Hallo, ich heiße Mario, komme aus Kanada und bin neu hier." This way you would get rid of the many "ich" and it sounds better.

Generally you have to use the first person singular of the verbs. That is generally formed by omitting the "-n" of the infinitive (hören->höre, spielen -> spiele etc.).
The same as above, we Germans enumerate with a high resonance, using every word as few as possible (like in english), but the way you phrased the sentence, every noun needs the infinitive + gern.
If you want to stress the "essen" you could say: "...und spiele gerne Klavier, außerdem esse ich gerne".
But the best way to phrase it and get the exact meaning of your english sentence would be: "Ich mag Snowboarden, Musik, Klavier spielen und Essen."
Depending on the context, most people like eating. Maybe you wanted to say you like to go out for eating or you like good food. If not, you could omit the "essen". Possible sentences would be: "Ich mag gutes Essen" or "Ich gehe gerne essen". Note the capitalization in the first sentence, that's because we are talking about food ("Essen") and not about eating something ("essen").

Generally things you are saying things "auf Deutsch", "in Deutsch" is not wrong either, but depends more on the context. You speak "in" German, but something is "auf" German.

Very good German. Everything is understandable and you write without spelling mistakes or anything. The only thing you need is the natural feel for the language, but that mostly comes with practice and only practice.
