I'm sorry to hear this. I hope you feel better soon! We usually say "to meet over Skype." We don't need the "in" before "this evening" because "this evening" is the time you were supposed to meet. While Spanish puts the negative in front of the adjective to negate it, in English we use the "I do not" construction when we use a negative to describe how we're feeling.
