Many of the interjections I use are a bit vulgar since I live with a family that swears casually. I think I've got some less vulgar ones, though. The following four examples are frequently used "minced oaths" (religious sayings that have been made milder so they can be used informally without being disrespectful). All of them are used mainly to express either surprise or annoyance.

"Jeez!" is a milder way of saying "Jesus!" ("Jesus!" isn't particularly vulgar, but many people don't like "saying the lord's name in vain", so maybe it's best to avoid by default). It can be used when something or someone surprises or annoys you, and although it can be humorous and playful, it's usually negative in tone. "Ugh, jeez, he's such a jerk!"

"Holy moly!" is similar to "Jeez!", but I reach for it to emphasize extremes. "Holy moly, it's cold outside!"

"My goodness!" or "Oh my goodness!" is a milder version of "oh my God!". For me, it's very light and playful. Very rarely do I use it negatively. For example, a distant family member at a party might say to a younger family member something like, "I haven't seen you in so long! My goodness, you've grown!"

"Goodness gracious!" (or also "good gracious!") is quite similar to "Jeez!" or "Holy moly!" "Good gracious, what are you kids doing out there in this weather! Get inside!"

A few more general ones:

"Oops!" - used after making a mistake, forgetting something, etc. I think you've already got this one, just make sure there's only one "p".
"No way!" - used to express either disagreement or disbelief (maybe even excitement). "That band from Canada? Apparently, they're going on tour and they're gonna be in California!" "No way, dude! We gotta see that!"
"Oh no!" - used if something bad is happening or has happened.
"Uh oh." - used if something bad is probably *about* to happen.
"Umm" or "uhh" - used to fill space as you try to figure out what you want to say. However, I dislike using it too much in speech.
"Well..." - might not be as common as some of the others, but I might use this if something odd or awkward happens. "Umm... well, that just happened!"

Neat! (dated — my mom uses this)

@Toluwani, I think the interjection you are thinking of is written "Jinx!" This is said by two people immediately after they both say the same thing at the same time. For example, we are listening to a friend tell us what happened to them the other day, and we both react by saying "That's so sweet!" at the same time. We would immediately look at each other and say, "Jinx!"

@Liag No, it's not Jinx. First time hearing of Jinx. Jinkes is from a cartoon [Scooby Doo], I watched. Never seen anyone use Jinkes anyways; I'm not even sure of the spelling 🥴.

Yay! Wow! - to express excitment, Ouch! - to express being hurt, Ugh!, Yuck! - to express dislike or disgust. I cannot think of other ones from the top of my head. I hope this helps.
