yesterday
I woke up feeling surprisingly good and I opened my window to be greeted by harsh Edinburgh weather. I don't remember when was the last time it was sunny. I fixed my usual morning coffee, and sat down next to the window. Every single day I see the same guy walking past my apartment without a proper rain jacket or umbrella, strolling down the street not bothered by heavy rain. I'm jealous. When was the last time I done something similar? I finished my coffee, found my old running shoes and decided that today is the time I should try something new. I never expected that running in the rain could be that fun.
Now, 8 hours later, I'm lying in my bed. Sick.
Chory.

This is really well written. Nothing is confusing, and any errors are tiny and don't interfere with the story. This could be written by an English speaker!
Where to start?
I woke up feeling surprisingly good and I opened my window to be greeted by harsh Edinburgh weather.
I don't remember when was the last time was that it was sunny.
"When was" is used in questions, but you have to reorder the words for statements. It think it's a common stumbling point for English learners.
"What day *was it*?" but "I don't know what day *it was*."
You could also just say "I don't remember the last time (that) it was sunny", which is simpler grammatically so might be easier (and it's common phrasing), but I wanted to stick to your word choice since it's also natural.

I'm jealous.
When was the last time I doneid something similar?
Just remember "done" is always used with "have" (have done)!
I finished my coffee, found my old running shoes and decided that today is the timeday I should try something new.
Not grammatically incorrect, but "today is the day" is a set phrase.
I never expected that running in the rain could be thatso fun.
When you say "never expected" or "never thought", you should use "so" before the adjective. You would use "that fun" like this:
"I didn't think it would be that fun."
This statement implies you were previously very sure that it wouldn't be fun, but were proven wrong. If you say "I never expected" or "never thought", it sounds like you didn't have any opinion before, and are surprised, so "so" is better because it emphasises "how much" (in this case) fun it is.
You can also say "I didn't expect it'd be that fun," which has the same negative sound of formerly thinking it wouldn't be fun.
Now, 8 hours later, I'm lying in my bed.
Sick.
