Just edited to be more like what we'd ask

A: Yeah, that Monday works for me, too.

We'd normally say the name of the day, or "it" instead of "that day", unless we're talking about a very specific date (e.g. June 27th, rather than "Monday")

I would normally say "the Monday after", not the following. However, both are correct!
