I haven't woken up this early in days. Since I began my holidays, I've been at home due to
the lockdowns in my country. I can only go outside depending on the last number of my national document. Even numbers can go outside a couple of days, and odd numbers the remaining days. I've been binge-watching a series called Person of Interest, and thus far, I've been able to watch it without subtitles without being lost as to what's happening. I'm very happy about that.
I was thinking about New years resolutions and decided I should start before it's new year, so as to have some sort of edge of at least two days. There are so many things I want to do and change, but I need to fight my laziness.

Since the beginning of the holidays, I've been at home due to the lockdowns in my country.
I think this sentence separated due to the program, but I'm not sure.
I wasn't sure if "I began my holidays" was correct or not, I opted for the safe side, because I think it might depend on whether "holidays" are considered the festivities/celebrations or your vacation days.

Great Job! Just a few corrections!
Day 2
I haven't woken up this early in days.

the lockdowns in my country.
I can only go outside depenon certain days, according ton the last number of my national document.
I can only go outside on certain days, according to the last number of my national document.
While "depending on" is grammatically correct, it sounds a bit funny here, since the letter on your document can't change. "According to," "determined by," or "based on" fit better since the rule is determined by the number.
Also, since the day you can go out is determined by the letter, it's clearer (and makes more logical sense) to include you can only go out on certain days. Otherwise it could mean that , with a certain number, you're not allowed outside at all.
Even numbers can go outside a couple of days of the week, and odd numbers the remaining days. Even numbers can go outside a couple of days of the week, and odd numbers the remaining days.
It's not clear in the original sentence what time frame you're describing, so "the remaining days" is ambiguous - the rest of the week? the month?
In this case, "a couple" is also inexact, so it would make more sense to use a concrete number here.
I've been binge-watching a series called Person of Interest, and thuso far, I've been able to watch it without subtitles, without being lost as to what's happeninghile still following the story.

These are two minor stylistic corrections.
"thus far" can often come across as more formal, while "so far" is heard more commonly.
Writing "without X without Y" is a bit strange and can lead to ambiguous statements. It also set you up here for an unusual phrasing ("without being lost as to what's happening.") Instead, the second statement can be made clearer by writing it as a positive statement like I did here.
I'm very happy about that.

You can have "an edge" or a "leg up" on something/someone, which means some sort of advantage over something/someone. It's more common to use those phrases with a specific person or thing that you're doing better than.
Here, it makes more sense to have more of a "head start," since you're talking about time, which means you can start earlier and get closer to your goal sooner.
There are so many things I want to do and change, but I need to fight my laziness.
