Weekend w zoo
Weekend temu, byliśmy w zoo.
W zoo były różne zwierzęta: tygrysy, małpy, pingwiny i żyrafy.
Niestety, pogoda była brzydka. Pada deszcz cały czas.
Zima to nie dobra pora roku odwiedzić zoo.
W zeszły weekend temu, byliśmy w zoo.

"Weekend temu" is grammatically correct, but I'd rather recommend "w ostatni weekend". The phrase " tydzień temu" and similar uses "time unit" + "temu (ago)", e.g.: "rok temu", "dekadę temu". To me "weekend" is closer in usage to week days, such as Monday, Tuesday, but others may argue. "Poniedziałek temu" sounds wrong, but "kilka poniedziałków temu" sounds good again. Go figure!

"Cały czas padał deszcz" sounds a bit more natural here.
Zima to nie dobra pora roku, aby odwiedziać zoo.
"Nie" + adjectives come together, unless used in sentences, such as: "On jest nie dobry, ale najlepszy." "Odwiedzać" vs "odwiedzić" - in general statements imperfective aspect is better.
