"做運動" = to exercise, but if you want to specify a sports activity you'd use "玩". You may also use "試" (try) in this case as it seems pretty fitting to what you wanted to convey :) So, "Which winter sports have you played other than skiing?" or "Which winter sports have you tried other than skiing?"
