I'd like to help Japanese learners with correcting as many posts as possible because there are a few people who can correct them. However, I'm really sorry that people have difficulty referring to the other opinions even if they aren't satisfied with my correction.
I will keep up writing and correcting even though I didn't mean to be a volunteer.

日本語の添削者が少ないためぜひ協力したいと思っている。ただ、私の添削に満足いかなかった場合に投稿者が他の意見を参考にできないのは申し訳ないと思う。
私としてはボランティアになるつもりはなかったのだが、これからも変わらず投稿と添削に励んでいこうと思う。
I'd like to help Japanese learners with correcting as many posts as possible because there are a few people who can correct them.
In my view, this also works. It has a more general and abstract tone for the amount of people who can correct.

I can tell you are working hard to correct many posts, and I appreciate your efforts to help so many people!

I'd like to help Japanese learners withby correcting as many posts as possible because there are only a few people who can correct them.
The phrase "with correcting" would mean that you would help these learners to correct other people's posts. Instead, "by correcting" means that you are correcting the learners' posts.
However, I'm really sorry that people have difficulty referring to the other opinions even if they aren't satisfied with my corrections.
Personally I think instead of "I'm really sorry" you could say "I feel bad" or "I feel regretful" and this would capture your meaning better, since this is not really something you should have to apologize for.
I will keep up writing and correcting, even though I didn't mean to become a volunteer.
Feedback
Good job! Thank you for working so hard. I appreciate all of your corrections, and I'm sure other Japanese learners do as well.
