Another idea might be to work with a local artist and offer flower arranging and drawing as a connected activity. I think pairing a tea ceremony with calligraphy practice might appeal to some people as well.

They seem very popular among travelers from the US, and cooking an ethnic dish in a group with the guidance of a chef is an activity that people who live in big foodie cities like NYC also enjoy, as evidenced by reviews posted by locals. Personally, I like the idea of collaborating with others who have specialties to create a group of experts that provide different experiences, rather than trying to offer every experience by yourself. Not only would it share the work burden, but it might allow you to schedule more than one event at the same time, and more people means a greater diversity of ideas for everything from decisions about advertising and marketing to solving unexpected problems.

Along the way, it may change a little (more time away from the city than in the city), and it is hard to estimate how much time it will take to build the business to the point where it becomes your full time work, if that is your goal.
