If you are talking about something that can normally change by its own or naturally change without special help, then use "estar", if you are talking about something that won't naturally change then "ser", for example: Yo soy rubio = I am blond, I used the verb "ser" because your hair color is not expected to change from brunette to blond by its own, Yo estoy en Venezuela = I am in Venezuela, I used the verb "estar" because today I can be in Venezuela but tomorrow I can be in Germany, Yo soy un hombre = I am a man, the gender doesn't change or at least not without a surgery and a heavy hormone treatment so I use "ser" because it is not something that you would expect to naturally change by its own
