Generally, I prefer sunrise because I think the best way to start the day is to watch the sunrise. I like both, and often recommended to watch them for a better
circadian rhythm. Maybe it's true, maybe not, but I like to see them if I actually can. Of course I won't get up early because of that, but if I spontaneously wake up, I watch the sunrise.

Your sentence is technically correct. Just a stylistic note, I think in a natural/normal conversation I'd say "Of course I won't get up early just to watch the sunrise, but if I spontaneously wake up, I do watch it."

I suspect this was just a little oversight, but your second clause needed a subject for that verb.
