Because you will remember the words in the future, 'can' has to be in the future tense. But 'can' has no future tense, so we have to use 'be able to' instead.

'could' instead of 'can' (because it's hypothetical). I changed the end because 'once' can mean either 'one time' (一度)or 'after' (から) so this is a bit clearer.
