I like the mountains of Nagano and have been there several times. My best memory is that I went hiking on Mt. Yari, which is over 3000 meters long. I always go hiking alone. I haven't gone hiking with anyone yet. I didn't have a tent yet, so I stayed at the mountain lodge for two nights. I shared a room with a group of 5 people. I remember playing Uno with them at night. The hike was painful on the way up the mountain, but The view from the mountain top made me refreshed. It was a breathtaking sight. Finally, I was above the clouds. I was so thirsty, and I ate an apple that I bought at a mountain lodge there. It was the best apple I've ever had in my life.

私は長野の山が好きで、今まで何回か行きました。一番の思い出は約3000メートル以上ある槍ヶ岳に登った時のものです。私はいつも一人で登ります。誰かと一緒に行ったことはまだありません。テントはまだ持っていなかったので、山小屋に2泊しました。部屋は5人グループの人達と一緒でした。夜一緒にウノをやったことを覚えています。山頂までかなりきつかったですが、頂上からの眺めで疲れが吹き飛びました。それは息をのむような光景でした。ついに私は雲の上にいたのです。私は喉がカラカラで山小屋で買ったリンゴをそこで食べました。それは今まで食べたリンゴの中で一番のリンゴでした。

This is subtle, but I feel like "that I went hiking" sounds more like you remember *the fact* that you went hiking. You remember that this is something you have done - you're not necessarily focusing on remembering the experience. You might say something like "I remember that I've met him, but I don't know what we talked about."

So this sounds a little more natural to me.
