Tee, Kaffee, oder heiße Schokolade– – was trinkst du gern?

Ich trinke heiße Schokolade lieber als Tee undoder Kaffee.

"oder" ergibt für mich hier mehr Sinn. "und" wäre sinnvoll, wenn die meisten Menschen sowohl Tee als auch Kaffee mögen.

Wenn das Wetter hieres heiß ist, stellgebe ich manchmal Eis in meine Schokolade.

"Das Wetter ist heiß" is not wrong, but a bit unnatural. You could however say: Wenn es ein heißer Tag ist, ..

"stellen" is used for placing solid things onto a solid surface. Icecream is not solid, nor is the chocolate.

Milo ist dereine bekannten Schokoladenmilch auf den Philippinen.

"es" is not completely wrong, but you are refering here to a noun of female grammatical gender. Hence you would say "sie", or use the weak demonstrative pronoun "das", to mean "this kind of beverage".

Aber neulichseit einiger Zeit muss ich auch Tee trinken, weil ich nicht so bald schlecht einschlafen kann.

"neulich" is used for single events in the recent past: "Neulich habe ich mit Billie Eilish zu Mittag gegessen”.

"In letzter Zeit" is used for repeated events in the recent past: "In letzter Zeit hat es oft geregnet".

Both require the past tense.

You want to express a repeated event which started in the past and is still ongoing. You can express it with "seit einiger Zeit" and have to use the present tense.

Er hat einen bitteren Geschmack, aber ich kann dann bald einschlafen.

It is perhaps a bit counter-intuitive, but "Geschmack" is for us a countable noun, and you need therefore an article. This is different to English, where you would can say: "He has bitter taste".

Probably correct. The sentence expresses the idea: "My mother said that in the evening, I should drink only THIS PARTICULAR tea, AND NOTHING ELSE. Is this what you wanted to express?

Obwohl meine Mutter täglich (einen) Kaffee trinkt, trinke ich keinen Kaffee.

The "einen" is not wrong, but you are talking here about the general idea of drinking coffee (and not about the number of coffees), and therefore it is more natural to treat "Kaffee" as uncountable.
