A: I don't know how I could say it in English. It's a Sichuan dish of stir-fried pork, cabbage, green onions, and so on seasoned with chinese Chili Bean Sauce and sweet flour sauce. Well, but in my case, I would buy the sauce for it.
B: Oh, maybe twice-cooked pork. But never eat of it. Is it good?
A: Yes. It's good. It goes well with rice. What did you have?

What you had is not incorrect, but since it's the name of a dish I think it's more natural to say "called"
It's a Sichuan dish of stir-fried pork, cabbage, green onions, and so onme other ingredients, seasoned with cChinese Cchili Bbean Ssauce and sweet flour sauce.
"and so on" or "etc" can only be used when the unsaid things are obvious to the listener, or things that are a set. When it's not obvious, you can say "and other things/ingredients/foods"
Depending on who you're talking to, calling Chinese sauces by their names, like tianmiajiang or doubanjiang is fine.
Well, but in my case, I would buy the sauce for itjust use storebought sauce.
"buy the sauce" is fine too, but "storebought (sauce)" is often used when talking about food, as opposed to homemade.
