Mutton Soup
The most delicious food from my childhood that I still remember today was mutton soup.
Back in that time, living conditions in the countryside were really terrible. I didn’t even have enough food to eat.
My father worked in the local government so he could get a salary every month. Although his salary was just a little (about six to seven dollars a month), my family did have a little money.
Sometimes, my parents bought a little lamb so we could eat mutton soup.
Before my mom made the mutton soup, she washed the mutton first, then boiled it and placed it in a kitchen cabinet. The broth was preserved for later use.
When she made the mutton soup, she sliced a few pieces of the mutton, found some sweet potato vermicelli, Chinese cabbage, ginger, green onions, a part of the original soup, then put them in the water that was already in the pot and heated them.
The Chinese cabbage and sweet potato vermicelli were the main ingredients of the mutton soup. There wasn’t as much mutton—often times there was not any.
But we still called it mutton soup because the soup that boiled the mutton tasted so good, and we liked that flavor.
This way, we can eat mutton soup many times by buying mutton once.
