We use — to interrupt one sentence with another. You can use it when you want to comment on something you said — like in this sentence!

I can feel the breeze like pats (on my back/like kisses on my skin, and the sunlight like pats , and cand hear the birds singing.

Since you used the same verb 2x in a row (can feel wind/sunlight), but change for the third item, it’s more natural to re-state the full verb phrase (can hear)
