This sentence is from an English learning material, but I don’t know why there is the “of” in it? Isn’t “A one trick pony is low value” correct enough?

You can understand that, but it sounds a bit weird. I'm not sure exactly why, but with the 'of' is how you usually would see a sentence like this - also 'of high value'.
