That "viel" vs "viele" is tricky here; "viel" => I'm trying to eat lots of vegetables. "viele" => I'm trying to eat many different vegetables. The latter sounds rather unusual in German, though it's not grammatically wrong. With my substitution of "enkele" I took a wild guess - I have no idea what you actually meant to say.
