Two years ago, I decided to let a young man use the field that hadn't been taken care of since my father's death. I knew this guy through the local agricultural cooperative. He told me he would do farming with his mom at the field, adding he wanted to have preschool kids dig potatoes there. His dream-inspiring story uplifted me.
When I passed by this field last month, I saw two kindergarten buses parked alongside it. Then, 50 or 60 preschoolers in gym clothes and boots got off them one after another. Potato digging! Under a clear sky, divided into two groups, they were listening to the guy, taking turns digging potatoes and being photographed as a memory.
When I talked to the guy while I was taking care of flowers at a nearby field, he beamed and replied, "It’d been rainy long but at last the sun came out, making the best opportunity for potato digging." While waiting for the buses to come, the kids had fun picking up acorns at the adjacent shrine and greeted me merrily by saying "Hello."
I greatly appreciated that they made full use of the field that my dad left behind. Feeling gratitude for them, I remembered my dad in the corner of my mind. He grew vegetables from early morning to dusk. Fieldwork was his motivation in his life. Hey, Dad, my decision was correct, wasn't it? The sky I looked up at was just brilliant.

I think "at my ... field" works too but I guess it's another way of saying.

He told me he would dlike to farming with his mom at the field, adding thay he wanted to have preschool kids dig potatoes there.
His dream-inspiring story upliftdream touch me/ touched my heart/ moved me.
I feel dream-inspiring isn't so natural, although I kind of get what you mean. Uplifted could work but I think for this situation, something like "touched my heart' would work better, or something like the above.

Under a clear sky, divided into two groups, they were listening to the guy, taking turns digging potatoes and being photographed as ato keep as for memory.ies.
I think it's better to add a verb to memory. And maybe plural for memory because it sounds we are talking about multiple memories of this potato digging experience.
When I talked to the guy teaching the kids while I was taking care of flowers at a nearby field, h. He beamed and replied, "It’d been rainy long but at lasing for a long time, but the sun had came out, making the best opportunity forso it was good chance to finally go out potato digging."
Think this sentence can be broken up to make it flow better. " making the best opportunity for potato digging." Sounds a bit formal in conversation, it sounds more like a presentation.
While waiting for the buses to come, the kids had fun picking up acorns at the adjacent shrine and greeted me merrily by saying "Hwith many hello."s.
I greatly/ deeply appreciated that they made full use of the field that my dad left behind.
FeelingMy gratitude for them, I led me to remembered my dad in the corner of my mind.
I assume here you mean while you were feeling grateful, you remembered your dad? Then maybe this way is more natural.
He used to greow vegetables from early morning to dusk.
Fieldwork was his motivation in his life.
This his is redundant here because you already used his to link to motvation. I.e. who's motvation? Your dad's motivation.
Hey, Dad, my decision was correct, wasI made a good decision, didn't it?I?
Sounds a bit formal/ robotic for "my decision was correct". Perhaps this is more natural.
The sky I looked up at was just brilliant.at the time was just beautiful as well.

Personal preference: When I talk about my children and nephews, I may say "kids". When I talk about other children, I tend to say "children"
