Playing the oboe is one of my favourite hobby, andies, I like it because I canit reduces my stress.

(Favorite is okay for a US spelling, I just corrected it to the UK spelling so you can ignore that if you like!) I can reduce my stress is also fine, but you would need to connect it to the first part of the sentence, for example by saying "because I can reduce my stress by playing".

But because of COVID-19, I haven't practiced my instrument sincefor 2 years ago.

I haven't practised FOR two years / I stopped playing two years AGO. In the UK, practiCe refers to a noun, practiSe refers to a verb - I think they can both be spelt with a c in US English.

Today, the recommendationed videos on Instragram showed me many oboe players and their playperforming.

"Performing" helps you to avoid the repetition of "play".

When I listened to their soundmusic, I was really into them, and Iit made me wanted to play mine again.

There are no mistakes here, but there are some subtle differences that could make you sound more "natural".

So I unzipped my oboe bag for the first time in 2 years, and I tried to practice.

At first, I was nervous abouto playing because I had forgotten many things about how to play.

Fortunately, my body remembered how to play it, even thoughif I couldn't play perfectly.

You could also call this "muscle-memory"!

Whether or notRegardless of the pandemic, I will start to practice it day bing every day.

Start to practise / Start practising are both correct, but the second one sounds more usual.
