I am very excited for my plan to travel to Japan this weekend.
I have bought air ticket and I booked hotel.
The restaurant I want to go to has already been full booked. But, never mind. I will go next time.
I want to take a walk along the seaside .
I want to soak in hot spring in Shirahama.

The original title is fine, the other options just sound a bit more natural

I have bought an air ticket and I booked hotel.

The restaurant I want to go to has already been fully booked.

I want to soak in (the/a) hot spring in Shirahama.

If there's a specific hot spring you have in mind, "the" is better here. If you don't know which hot spring you're going to "a" is better. You need one of them though.

I added unfortunately because at first it wasn't clear to me if you had booked the restaurant, if if you couldn't because it was already full. Adding this word takes away any doubts the reader may have.

But, never mind.
