I don't remember the basics about English, I forgot it so I want to ask you, if I say todays eyes don't want to sleep ¿the don't is correct? and if I say my eye doesn't want to sleep ¿is correct?

Yes, “don’t” and “doesn’t” are correct. “Today’s eyes” is a bit odd. 🙂

Well, it depends on what you mean. The phrase “today’s eyes” isn’t common (a day doesn’t have eyes, after all) so I’m not sure what it means. But in a poem it might not matter—perhaps you want to let each reader decide what it means to him or her.
