There was a post here talking about someone trying to say 人魚 into Google Translate but it just kept picking it up as 人形. I tried doing it too but it always spit out 人形... made me feel like I suck lol

Your pronunciation isn't very good because Google Translate doesn't always catch what you say? Do you mean you are learning to speak the wrong way because you have to speak in a way that Google Translate can understand?

Computer voice recognition will often mishear even native speakers. I have to speak very clearly and carefully to computers to guarantee they can catch what I'm saying. This is not a natural way of speaking to other humans, though. I wouldn't say it's a bad thing to use for language learning, but it's definitely not ideal, especially not on its own. My advice would be to try and find podcasts, movies, shows, YouTubers, etc, who are in English so you can hear actual people speaking the language. Also, you can record and listen to yourself speaking a few example sentences.
Otherwise, though, your written English is quite good! Hope this helps!

I’m a language teacher. Google translate is not good for speaking practice. To practice your pronunciation listen to native speakers and imitate them. Also, reading aloud from a book will improve your pronunciation.
