Well, most animal names differenciate between males and females (ex « un mouton/un bêlier/une brebis », a ram/an ewe/a sheep (any sheep regardless of gender) but in the case of animal names that do not, although the pronoun can sometimes be different to indicate gender, it's far from being common and I wouldn't recommend a learner of doing so.
"Une grenouille", for instance, will always be a "elle", regardless of the frog's actual gender.
