Mung bean was one of the crops that the people in my village planted when I was a child.
They didn't plant it on a large scale because it was not the main food in the area.
Three uses of the mung bean were making porridge, mung bean soup, and mung bean balls.
When they used the mung bean to make porridge, it was pretty easy. They put one or two handful of the mung beans into the pot. The main ingredient for the porridge was rice, not the mung bean. If you put too much mung bean, the porridge wouldn't taste good.
Making the mung bean soup was the easiest. Put two handful of mung beans into the water in a pot, and heated the pot until the water had boiled for about ten to twenty minutes. People believed that the mung bean soup could prevent heatstrokes, so they liked making mung bean soup during the hot summer.
The toughest one was to make mung bean balls. Before the Chinese New Year, people in my area had a tradition: making mung bean balls.
They first soaked the mung bean in water for a night, and then ground the soaked mung bean on a man powered millstone. I turned the millstone a few times, and it made me want to vomit.
Finally, they made the mung bean residue into small balls and fried them. I have to admit that the fried mung bean balls are really delicious.
Even now, people in my home village still make mung bean balls before every Chinese New Year.
