The first Moroccans might have been simple, but they were defiantly creative and clever we see that in tagine they put the meat in middle so on one hand it cooked entirely, and on the other hand you need first to eat the healthy vegetables, and the same go for couscous it brilliant take a container and put many holes in it, and full it with grains and lay above bubbling stew this way the stream will flavor the grains and swell it turn couscous to a master piece of gastronomical experience that will let you full but still wanting more.
Unknown to us where the word couscous come from, but we are sure couscous is a Berber dish, some say it call couscous because of the hissing sound it makes. you might find slightly different pronunciation form region to region you might hear seksu or sikuk, though if you just say couscous everyone will understand you. most Moroccan prepared and eat couscous on Fridays, a few incorporate couscous into their diet at least a few times a week.
There is too many variations of couscous, that I will need an enter book to cover to all people love it that spread on all regions of morocco and every region customize it to what they have and what they prefer until end up with this beautiful divorce dish
At one point in time, couscous was also the countrywide dish for southern Spain however, when the Arabs were expelled it became illegal to eat couscous by the decree of the inquisition. Only in recent years has couscous made an appearance in western cultures. Unfortunately, many pre-packaged instant varieties of couscous circulate in western stores. As a result, many people have the wrong idea that couscous should not take much longer than minutes to prepare. While it is possible to achieve a good couscous if handled properly, an authentic couscous can take up to five hours to cook slow maybe but its boldly heavenly dish lovingly prepared, the great deal of time was spent preparing this meal was time well-spent.
Traditionally, Moroccans eat couscous every Friday or when we have a special occasion people eat it when in wedding, circumcisions, birth and when even someone dies the couscous is prepared by the neighbors as way of saying that we grieve with you we feel for your lost, we also give to the poor as sadka, there is a famous Moroccan saying A handful of couscous (given to the poor) is better than Mecca and all its dust

Tagine is a wonderful dish - I tried making it a few weeks ago and I loved it, so I might try it again tonight or tomorrow.
I haven't had couscous in a long time though, so I might buy some soon.
