You can use "some of the people" when you're talking about a subset of a specific, previously identified group of people, but if you're just talking about people in general, "some people" is more natural.

There's more than one person in the group of people who choose to learn just one language, so you use others here.

If you learn one language you have enough time to achieve an almost native speaker level.

If you learn several, then you have the opportunity to immerse yourself in different cultures.

The "then" will get omitted in casual speech, but in writing, it's better to include it.
