Great job! Just a few corrections!
Last week was a streswsful week, because my mother (who takes care of my children) went out fromleft Ecuador to go to Colombia.
There are many ways to say this. You can also say “My mother (went away to Columbia from Ecuador/traveled from Ecuador to Columbia/ left my house and went to Columbia.)
They traveled together, but they went with my aunt too.
If “they” refers to your aunt and your mother, then it should be “She went with my aunt and they traveled together.” You should put “She went with my aunt” first to give context.
Ago 2 days ago they returned, and they told me that the trip was amazing and they enjoyed it a lot.

iIn summary, the last couple of days were amazing with my childsren.
And I hope my mother will knows for more places in the Wworld.
This sentence is confusing. I’ve fixed it grammatically but it doesn't make sense. I think you might mean “I hope my mother will travel to more places in the world.”

Good job! I'm glad you got time with your family.

Minor correction in spelling. Minor correction in verb tense
They traveled together, but they went with my aunt too.
Minor correction in verb tense. Unless you mean your mother when with your aunt instead of with the children. I would then write:
They usually travel together, but this time she went with my aunt instead.
Ago 2 days ago they returned, and they told me that the trip was amazing and they enjoyed it a lot.
Minor corrections. We say "1 day ago, 3 days ago" to indicate past in that format. There needed to be an "it" added as the verb "to enjoy" requires something to enjoy
Example: "I enjoyed the movie a lot" to "I enjoyed it (the movie) a lot"
Meanwhile, in at home, my wife, my childsren, and I enjoyed being alone.
Minor corrections. Children is the plural form of child. "Meanwhile at home" without a comma reads better as it's a phrase before introducting the subjects. Though with a comma is still okay. Minor correction in verb tense
I think last week was stressful, but also fun.
Comma always before but no matter what, I think
inTo summary, lastize, the last few days were amazing with my childsren.
We say "to summarize" when wanting show a summary of events. Minor correction with plural form
And I hope my mother will knows forgo to more places in the Wworld.
I am not quite sure what this sentence says. The verb "to know" means something along the lines of "to remember", so it doesn't fit here. However if you wish your mother will go to other places, this sentence would make sense instead
