I just bought a French cookbook that has a section only about onions. I didn't know onions could be so flavorful.
In my culture onions are more a side dish than the main ingredient.
I had cooked a few dishes from this section now and I have to say that I love most of the recipes, the only drawback is that is needed a lot of fat to cook. But now I understand that it is a healthier option, rather than eat a burger with fries or have a chocolate cake, you can have some delicious comfort food with lots of veggies in it. I just need to keep in mind that is only that, a healthy option among others not a diet or something to eat every day.

Fantastic piece! Eating healthy is hard. I cheat, and eat rice + broccoli + chicken regularly. It's still hard to say no to junk food sometimes, though... good luck with your cooking adventure!
