As for liking vegans or not, I think French people have nothing against them in general. The very vocal minority patronizing others in a holier-than-thou, sanctimonious way like "OMG you horrible corpse-eater, how can you eat animals, you monster?!" can be irritating though. French people generally don't like being shoveled an ideology down their throats (whatever the ideology in question may be).

Thanks for the corrections! I was told by a waiter in Paris that the French would be insulted by the request to make changes to a meal, like removing cheese, because it implies that there was something wrong with the meal as it was originally prepared. I agree, though - I also don't like sanctimonious vegans hahaha. Thanks again!

Nope, not at all! Actually, it's pretty common for restaurant customers to ask for one ingredient to be removed. Well of course, if you order a "coq au vin without meat" or something like that, the waiter may look at you in a way that basically says "are you for real..?", but aside from that, it's totally fine ;-)
