I corrected many Japanese journals.
I am neither a professional teacher nor an especially intelligent person.
I just really like studying with people who are learning Japanese. :)
Also, I rewrote my past journals.
I really appreciate that so many people help me learn!

私は日本語の日記をたくさん添削しました。私はプロの先生でも、特別知的な人物でもありません。ただ、日本語を学ぶ人たちと一緒に勉強するのが本当に好きなのです:) また、私は自分の過去の日記も書き直しました。たくさんの人が私の勉強を手伝ってくれることに感謝しています。本当にありがとうございます!
今日はとても良い一日でした。みなさんも素敵な一日になりますように。そして、明日もラブリーな一日でありますように。おやすみなさい!

without especially/particularly/etc is totally fine too, i just think it helps to clarify that you’re not saying that you’re not intelligent at all, but that you’re just normal :)
I just really like studying with people learning Japanese.

the other way around is fine too, but if the sentence is going to be short, I think this sounds better.
I really appreciate that so many people have helped me learn!

As Bees mentioned, you shouldn't start a sentence with "and". However, you can combine sentences with "and" in order to get the same meaning.
But, I'd say that the way you wrote it is okay in this case because you weren't really starting another sentence, you were just splitting your sentence with ":)". However, you should remember that in proper English, you shouldn't start a sentence with "and".

You shouldn't start sentences with "and," and the "and" is made redundant by "as well" at the end of the sentence anyway.
