I definitely don't want to get infected with coronavirus because if I get infected, I’ll not be able to return to Japan. I'm really looking forward to it, so I'm taking thorough measures against infectious diseases.

I definitely don't want to get infected with coronavirus because, if I get infected, I’ll no won't be able to return to Japan.
What you wrote is correct. We just usually use the word "won't" which is the contraction of "will not." The contraction doesn't really make sense so we just memorize it.
I'm really looking forward to it, so I'm taking thorough measures against infectious diseases.

Excellent work! I hope you're able to go back home to Japan! Best of luck!

"I'll not" is technically, "I will not", which would be correct in this sentence.
However, "I won't" is more commonly used.
So in my opinion, either use "I will not" or "I won't".
I'm really looking forward to it, so I'm taking thorough measures against infectious diseases.
