What you wrote is correct. We just usually use the word "won't" which is the contraction of "will not." The contraction doesn't really make sense so we just memorize it.

"I'll not" is technically, "I will not", which would be correct in this sentence.
However, "I won't" is more commonly used.
So in my opinion, either use "I will not" or "I won't".
