I think it might be a very good idea to write some words in English every day. I already do this for Italian and Japanese and I think it helps a lot with getting better in the respective languages because it makes you actively use the grammar and vocabulary learned before. Now for me the thing about English is that I'm using it already every day just by navigating through the internet, be it to gather some information or be it to just waste some time with a video on youtube. But today I realised that even if I've been using English for many years now and feel quite confident when using (i.e. listening and talking) it, at the same time, very often im quite unsure about how to use a specific word, about prepositions and many others things. I also know, that my passive vocabulary is much bigger than the active one. I know that this is quite normal and is even valid for ones native language but I really could push myself to use more advanced words actively that I come across when reading about something in English. Well, I really hope this new activity will help me with achieving exactly this (even though in this text I haven't really used any new words).

I also try to do the same thing lol. Force myself to write Japanese in little sentences then type out a bunch using vocab/grammar I just learned from lessons to put them to active use. So I can grow by putting them into practice. I do think it helps a lot with memorizing what I just learned better, too.

Whether "me" or "you" is better here... I could see English speakers using either. I tend to suggest people not to use "you" when it isn't necessary.

"whether it be to" is a really strange, though correct (I think), English phrase, but I felt it matched your original wording. I feel more natural is something like this:
Whether I'm gathering information or just wasting time on Youtube.

I used to have this strategy, but these days I try more to use the most "appropriate" words actively. I've offered suggestions on a number of writings on this site where even I've had to double check the dictionary. Sometimes I learn a new word in Japanese and I get all excited, but then correctors often suggest to me instead to use a word I'd never heard before or a word I knew, but didn't know of this usage. Sometimes more advances, sometimes actually much less. These days, I just try to write well and don't worry about grammar or word usage.
Anyway, I struggle to even Just write in Japanese multiple times a week so if you're able to juggle multiple languages, I think that's really amazing.
