This is a good effort! It is more accurate to say that what follows “into” is some work for grouping, and what follows “by” is the criterion or variable.
This is difficult to describe, so here is an example…
Zahra has no kids.
Lucie has no kids.
Eloise has one kid.
Paula has no kids.
Marie has four kids.
Arabella has one kid.
Alice has no kids.
Shane has no kids.
Constance has no kids.
Rachael has three kids.
We can split these ten people INTO groups BY number of kids:
The group with no kids: Zahra, Lucie, Paula, Alice, Shane, Constance.
The group with one kid: Eloise, Arabella.
The group with three kids: Rachael.
The group with four kids: Marie.

Yes indeed! You said that really well! “According to” is not wrong, but that phrase is more common for thirdhand information or advice. For example, I might say, “According to this news article, COVID is extinct in Vietnam.” It sounds like direct quotation. I hope that makes sense!

Earnings is used generally in plural. We don't say "an earning", it's always used in plural.
However, income can be used in both plural and singular. So in this case, "X is classified by their incomes" will also work.
