In Argentina, alfajores, cookie sandwiches filled with dulce de leche (which looks a bit like caramel but doesn't taste the same), are very popular. There are different kinds of alfajores.
One of them is what we call "alfajor de maicena". When I googled it, I saw that in English they are called cornstarch cookie sandwiches. It's a sandwich made with two cornstarch cookies and with dulce de leche between them. They usually have shredded coconut stuck to the dulce de leche, but if you make them at home, you can use sprinkles instead or you can decide not to use it. They are very easy to make because the cookies are sold at supermarkets specifically for making this kind of cookie sandwiches, so we only have to form the sandwiches and roll them in shredded coconut. However, you can make them from scratch if you want.
This kind of cookie sandwich is horrible to eat if you have nothing to drink. It's like they won't go down my throat because of the combination of the dryness of the cookies and the density of the dulce de leche. Thank you for letting us know more about alfajores! I just googled them and they look so tasty! Unfortunately I have not gotten the chance to try them yet. I don't think there's a big Argentinean community where I live.
As for a way to say "dulce de leche," I believe you can call it "caramel” or "sweetened milk?" I looked up the difference between caramel (which is made from melting sugar and water) while "condensed milk" is made from cow milk and sugar.
