It was not very hard, but I didn't have enougmuch time to do it.
“Enough”, to me at least, indicates that you didn’t have the time to finish it so “much” might be a better choice. You could also say “but I didn’t have enough time to refine the details” or something like that to show that while you did have enough time to finish it, you didn’t have as much time as you would’ve needed to produce some more or less perfect work.

I just thought I’d add on that comment. I don’t have the time to watch the whole video right now but I did watch a tiny bit and it looks like it was fun! The scenery also looks really beautiful.
