I traveled to the Black Hole Waterfalls during the Chinese New Year Holiday.

It's a big group of waterfalls located in Ningguo City, Anhui Province, in east China, not very far from Shanghai.

There were so many different types of beautiful water.

Using “so many” to mean “very many” is fine in casual writing like text messages and social media posts, but not in most other types of writing.

“Water” on its own doesn’t work at the end of the sentence. You could say “types of beautiful, moving water” if that’s what you mean.
