The number of the noun has to be consistent with the number of the adjective in Spanish. If you use singular for the noun, the adjective also has to be singular (Flor / Favorita (femenine)), (Flores/ Favoritas)

You can say this in two different ways, with or without emphasis. We don't use quantifiers (mucho) to reinforce the meaning of the verb encantar. But we do use them with "gustar". So, we use:"Me gustan mucho....(article/ noun)" or, "Me encantan...(article/noun)". Check that the verb number matches the number of the noun/subject like the sentence grammar structure rule in English on subject-verb agreement. ("Me encantan las flores -plural article +plural noun, matching a plural- conjugated verb) In the second part of the statement, check that there is agreement between the gender of the article (female/male) with the gender of the adjective / noun => Flower is female, so you need and indefinite-female article : "Solo una es (mi) favorita (una/ favorita)", (different expression, I changed it for the purpose of explaining) Correct approximate version: ".....es difícil elegir solo una como mi favorita" (una / favorita)

Please refer to the grammar references above. Check consistency in gender (female/ male) across pronouns, adjectives, verbs, nouns in Spanish. No need to add a subject pronoun here (ellas), since you are referring to the same noun within the same entonces. In Spanish we don't use them as often as we do in English

In Spanish we take adjectives in a more literal way than English. For example: if you write that somehing is brilliant we will expect to see something shinny or bright, since flowers are not shinny as metals could be, we use different adjectives with approximate meaning. For example you can use "vibrant" in place of "brilliant" for flowers. Similar with smile, the flowers make you smile, so you can use "me dan alegría" / me hacen sonreír.
