I used an text AI called DouBao to translate my CV from Chinese version into English version lately. I have submitted the English CV to several abroad companies, but it was rejected each time. I am wondering where the problem was, whether it has relation with the AI translation.

You could simply call in an AI.
“Lately” would be OK if you had done this repeatedly: “Lately, I been using AI to translate many things, including my CV.”
I have submitted the English CV to several abroad companies abroad / overseas, but it was rejected each time.
“It was” is correct.
I am wondering where the problem was, and whether it hwas relation withed to the AI translation.

Agree with you. I have a question with the sentence "I submitted my English CV to several companies abroad, but they were rejected each time", why we use plural form they ?

Because you sent copies of your CV to different companies. But “It was rejected each time” is not incorrect. Plural just sounds better.

I am thinking about this question, and I respectfully disagree with @japanada. Here is why:
"I submitted my English CV to several companies abroad, but they were rejected each time"
"My English CV" is singular, so you can't refer to it with "them."
1. "I submitted the English CV to several companies abroad, but it was rejected each time." This is your original sentence. It is correct grammatically. You used "the" because you were referring not to your CV itself, but to the English version of it.
2. "I submitted the English version of my CV to several companies abroad, but it was rejected each time." This makes it crystal clear.
3. I submitted copies of my English CV to several companies abroad, but they were rejected each time." The grammar is correct, but the sentence is inferior because it puts the emphasis on "copies."
