When writing in English, I feel less stressed as I have ample time to construct a sentence. There's no one waiting for me, and all I need to do is write in English on my own. Thus, it doesn't matter whether I can form sentences rapidly. If I get stuck, it's fine since I can take my time to think about the sentences.
When it comes to speaking, it’s totally different, because the person who is talking to me is right there waiting for my response. This brings me a lot of pressure and stress. I'm expected to respond to them right away. I cannot imagine the situation where a person is waiting for my response. So whenever I talk to people in English, I often make mistakes and have difficulty expressing myself.

Good job! I definitely agree with that. It’s for this same reason that I always say I prefer reading over listening in a new language (which of course doesn’t help with actual in-person interactions which are often the whole point of a language). But your English is really good!
Some tips for speaking that my teacher suggested to make conversations flow a little better even with pauses and stumbles include using fillers while you’re thinking of ideas just to avoid an awkward silence (for example “um”), or to try to pause between ideas (so like finish one idea, then pause while you’re thinking of your next few words, then go onto the next idea).
