Two weeks ago, I planned to write an entry daily during my holiday in Quanzhou.
However, I was too busy and tired to do that.
Quanzhou is such a wonderful city that I had to spend more time exploring it every day. We even got up earlier than our workday and went back to the hotel very late.
I'll try to share some pictures and videos with you in the coming week.

“More” is a relative comparison word and needs something else to compare to. “More than planned”, “more than I wanted” etc.
We even got up earlier than our workdaynormal and wengot back to the hotel very late.
Original wasn’t wrong but this sounds much more natural to me

“Daily” feels unnatural to me, but it’s probably idiomatic to some native English speakers.
However, I was too busy and tired to do that.
Quanzhou is such a wonderful city that I (just) had to spend more time exploring it every day.
Adding “just” changes the tone, clarifying that you wanted to spend this time (you weren’t “forced” to do so).
Suggestion:
Quanzhou is such a wonderful city that I couldn’t help but continue exploring it day after day.
We (even) got up (even) earlier than ourwe would have on a work day and {went back | got back | returned} to the hotel very late.
