I can't explain exactly why "without having seen it" is better than "without seeing it". I believe it's because "seeing" is in the -ing form which means continuity. Whereas "without having seen it" means an action that is undertaken and finished. Once you have seen the film, you can talk about it. Not once you have been seeing it.
