Writing is so simple. You can write anything you want as long as you are interested in them. For example, when you were young, there would be many unforgettable things. You can write them. You said you want to learn Cantonese, so you can also write it; why? Or anything interesting with Cantonese.
The pandemic situation in Anhui is very good because so far there’s not a single case. But in Hong Kong it’s really the worst. The new infection has increased by over 50000 a day.
No one knows the origin of the Covid, even what stuff it is. I worry that we are not able to eliminate it, and it will exist with us. So stay safe and stay healthy.

I don't understand what you mean by the "stuff" that covid is. Everyone knows its a sort of coronavirus, that's where it got its name from.

Great little piece of writing, good job! Just be mindful of the fact that in English we use a lot of words to mark tense, and often your writing feels incomplete and like it's missing words because you haven't marked your tense correctly.

In response to why I used “would have been” and “will not be able to”: it’s all a matter of tense. For the former you needed to use the past tense and the latter required the future tense because the actions take place at those times. The former talks about being young which necessarily happens in the past while the latter talks about one’s hopes for what will happen in the future.

In regards to the dropping of the ‘about’: no, you can’t drop it. Saying “you can write them” implies that you’re writing, something like a letter, to another person. You need the ‘about’ to clarify what you mean.
