我今日我做咗七個鐘嘅工嘢。
since its the verb 做 instead of 返工, so the pairing is - 做嘢 / 返工; you break it off either 今日我做咗七個鐘嘢 / 今日我返咗七個鐘工.
also, given that you are starting this diary with this sentence, I think the time indicator should be put in the beginning of the sentence, this is a stylistic choice tho.

我用咗好多時間（打掃屋企 / 執屋）。
執屋 is a more often used words in canto while 打掃屋企 is more used in formal writing.
我抹洗咗廁所，又洗咗衫。
I see the confusion here. Usually when the object is toilet, its paired with 洗; if you want to use 抹, then the objects are usually something smaller like mirror/toilet seat/bath tube, etc.
晚上我煮咗夜晚我（煮咗 / 整咗）啲餃子。
煮咗 is perfectly fine; but afaik, people tend to say 整咗 more, its more of a stylistic choice.

I like this kind of writing more. When I'm writing my journals here, I tend to challenge myself using a lot of expressions/verbs that were freshly learnt or just straight out "limit testing" to see if my way of expression is ok. This way, I can tell you the nuance between different verbs/expression in particular circumstances. Keep up!
