You already conjugated the verb of "ser" to say I, so you don´t have to say it, it sounds more natural this way. Unless you really need to remark that you are the one doing it, then you would add it.

Yo hablo inglés.
soy is from the verb ser - (to be), here you are saying I am speak english.
Here you can also take the "yo", because you are already conjugating the verb.
Yo bebo agua. Yo bebo agua.
