Operating principle

Evaporation and condensation are the operating principles of the distillation process used to produce wine. The boiling point of wine is lower than that of water, approximately 78°C, which allows the wine to evaporate easily and separate from the mixture (the solution obtained after fermentation with rice). The wine vapor is then cooled as it passes through a pipe, causing it to condense back into a liquid form, which is subsequently collected.

We will obtain several components when distilling. And the number of components will be the number of products. For example, for the water system, the top product of acetic acid is water, while the bottom product mainly consists of acetic acid with a small amount of water.
