Today, I had hot pot for lunch at Ryutenko in the Koyo Grand Hotel.
It was the first time I had eaten this Chinese-style hot pot stew.
According to a website, it is typically served with a pot divided into two parts, and two kinds of soup, spicy red soup and chicken white broth.
If you look at the pot from above, it is shaped like a taijitu, a symbol of yin and yang.
And there are two different colored meatballs separately in each soup beforehanded when the pot is served on the portable stove.
You put a thin slice of meat into a hot pot, then you swish it back and force several times until the meat turns pink.
The soups have such a strong taste that you don’t need to dip it in source when you eat.
Not only meat, there are many kinds of vegetables and mushrooms on the plate.

You don't have to start a new sentence with "And", you can just start with your topic.

You put a thin slice of meat into a hot pot, then you swish it back and force several times until the meat turns pink.

The soups have such a strong taste that you don’t need to dip it in source when you eat.

When you are about to list off things, it is common to use a colon (:). One example is "there are four cardinal directions: north, south, east, and west."

The soups have such a strong taste that you don’t need to dip it in sourauce when you eat it.

Not only meat, there areIn addition to meat, the dish is also served with many kinds of vegetables and mushrooms on the plate.

"Not only" doesn't fit well here because the previous sentence doesn't set it up well and it usually goes with "also".

A better setup would be "There are many ingredients in hot pot. Not only meat, but also many kinds of vegetables and mushrooms."

"there are <etc> on the plate" is fine, but a better term when discussing food is "serve." A waiter can serve someone food. Food can be served with certain other foods (example: "hamburgers are typically also served with french fries").
